Carrot Cake Cookies (Gluten-Free, Low Fat, Kid-Friendly)

Ingredients

  • 1 cup gluten-free oats
  • 3/4 cup grated carrots
  • 3/4 cup almond flour or whole wheat
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • pinch of salt
  • 2 tbsp coconut oil melted and cooled
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup pure maple syrup

Instructions

  1. Preheat oven to 325°F.
  2. In a medium sized bowl, mix together the dry ingredients. In a separate bowl, whisk the egg, coconut oil, vanilla, and maple syrup. Add everything together and mix on low speed, or hand mix until well combined. Fold in the grated carrots. Cover and refrigerate for 1 hour.
  3. On a cookie sheet lined with parchment paper, scoop in 1 - 1 1/2 inch thick batter into balls and flatten slightly with a spoon.
  4. Bake for 12-15 minutes. Let cool and serve.
