Melt the coconut oil or butter in the microwave or on the stove and then let cool. Combine oil/butter with sweetener, vanilla and salt in a large bowl and mix.
Add in the almond flour and knead dough with hands.
Fold chocolate chips into the cookie dough. If your consistency is too thick, add a tablespoon of milk or cream of choice, or add a bit more flour to return its thickness.
Shape the cookie dough balls to whichever size you prefer by hand, or you can use a cookie scoop. Store in the freezer and enjoy!
