Preheat a deep sauté pan with generous olive oil. Season the chicken thighs and sear on medium high heat until golden and crispy, about 5-10 minutes per side.
Add in the long grain rice and broth, cover and simmer on low for 30 minutes.
Stir in the onion and garlic and cook for another 5 minutes, uncovered.
Garnish with parsley, and enjoy!
