Chicken and Rice Ingredients
- olive oil
- chicken thighs
- seasonings
- long grain white rice
- chicken broth (or sometimes I will use a chicken bouillon and water)
- onion
- garlic
Easy Chicken and Rice Recipe
All you need to do is to sear the seasoned chicken in oil on high heat on both sides, add in the uncooked rice and broth, simmer, and then toss in the onion and garlic to sauté at the end.
It really doesn’t get any easier than that.
This dinner is great for portioning out into containers to meal prep for the week, or serve with your favourite veggie side.

Whether you’d like to add a container to your child’s lunchbox or have ready to eat for lunch or dinner throughout the week, then meal prepping is the way to go.
This saves you money by have meals portioned and prepped, ready to go. All you have to do is reheat them.
I love using these airtight Rubbermaid glass containers, and I would portion each one with a chicken thigh, rice, and a side of veggies like delicious Italian broccoli or broccoli salad.
Simply store the containers in the fridge for 3-4 days, or in the freezer for up to six months.

Easy One Pot Chicken and Rice Recipe (Gluten-Free)
Equipment
Ingredients
- 2 tbsp olive oil extra virgin
- 6 chicken thighs
- 1 tbsp paprika
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt and pepper
- 2 cups long grain white rice (gluten-free)
- 4 cups chicken broth or water and chicken bouillon
- 1/2 onion chopped
- 4 cloves garlic minced
Instructions
- Preheat a deep sauté pan with generous olive oil. Season the chicken thighs and sear on medium high heat until golden and crispy, about 5-10 minutes per side.
- Add in the long grain rice and broth, cover and simmer on low for 30 minutes.
- Stir in the onion and garlic and cook for another 5 minutes, uncovered.
- Garnish with parsley, and enjoy!
