Slice eggplant lengthwise into 1/2 inch slices (thinner than that can turn out too mushy).
Lay out slices onto a parchment lined baking sheet. Sprinkle with sea salt and let sit for 15-20 mins to draw out moisture, then pat dry with a paper towel.
Add seasonings, parmesan, and drizzled on olive oil. Flip eggplant slices over and repeat.
Bake for 25-30 minutes, broil for 2-3 minutes if desired for extra crisp.
Mediterranean Dip
In a small bowl, combine ingredients and mix or whisk to fully combine.
