Ingredients for Healthy Breakfast Broccoli Egg Bites
All you’ll need for these delicious egg bite are:
- eggs
- broccoli
- cheddar cheese
- salt and pepper
- bacon
- whole milk
- cottage cheese (optional, for added protein)
- green onions/chives for topping
How To Make Broccoli Egg Bites
- Cook bacon first until nice and crispy, pat dry with paper towels
- Preheat the oven to 350 and whisk the eggs in a large bowl
- Mix in finely chopped broccoli, shredded cheddar, chopped bacon, milk and seasonings
- Grease a muffin tin (avocado oil spray, butter, or olive oil works), fill each cup with the mixture, and bake until done
Time-Saving Tip: There is absolutely no need to steam the broccoli before hand. It cooks perfectly while in the egg mixture. If you are in even more of a pinch, you could use bacon crumbles or chop up ham from the fridge to save time on cooking.
Baking Tip: Use a silicone muffin tin so that you’re not left with stuck-on batter and scraping endlessly during cleaning (I’ve had to throw out muffin tins even after greasing them prior to baking). Very little oil is needed when using a high quality tray. This non-toxic non-stick muffin tray is highly rated and worth the investment.

Optional Ingredient Add Ins
Cottage Cheese – Which is great for adding even more high protein content. Simply blend or mix with a high speed mixer before adding to the egg mixture so that it’s not clumpy, unless you like it that way!
Spinach – A great substitute for broccoli if that’s all you’ve got in your fridge or you want to switch up the recipe each time. Lots of nutrients and benefits and a great way to sneak in veggies.
Egg Whites – You can use a carton of egg whites instead if desired, which is cost effective and convenient. Some may want to consider egg whites to cut back on calories and cholesterol if preferred.
Other Cheeses – You can easily swap out the cheddar for other tasty cheeses like feta cheese, mozzarella, or a blend of anything your heart desires! Parmesan is also a very delicious option to add with the cheddar or as a substitute.
Meat Options – If you don’t have bacon or want to switch things up, you can try chopped up ham, turkey, chicken, or turkey bacon. Even chopping up leftover steak or sausage are tasty options to try!
Onion – Depending on picky eaters in the house and personal preference, you could add finely chopped onion or chopped green onion to the mixture before baking as well!

How to Store Broccoli Egg Bites
Once your egg bites have been bakes to perfection and removed from the oven, you’ll want to pop them out of the muffin tin to cool, either on a plate or cooling rack.
- store in an airtight container in the fridge for 4-5 days
- store in an airtight container in the freezer for up to 4 months.
Sometimes it can be helpful to wrap or space them out using parchment paper for easier removal.
How to Reheat Broccoli Egg Bites
When grabbing them from the fridge, you could reheat as desired in a toaster oven or in the microwave for 30 seconds. Use a paper towel to soak up any moisture if needed.
When reheating directly from the freezer, you’ll also want to use a paper towel to absorb any moisture after microwaving. Use a toaster oven or frying pan to crisp up again.
