
Low Sugar Easter Protein Bars
This most special time of year calls for all of the mini egg recipes and crafts to do with the kids. Except, us moms want something a little healthier with less sugar, if you know what I mean!
These mini egg peanut butter protein bars are absolutely delectable, and taste just like a scrumptious dessert. You’d never guess how low the sugar actually is, and you’re getting all the benefits from essential amino acids that keep you full.

Why High Protein?
Our bodies need protein! Women need a lot of it, especially for energy. I usually aim for at least 100 grams each day.
If you find yourself snacking throughout the day, protein can easily help with that. Think of it like this — if you eat a slice of pizza or a bag of chips, it’s hard to stop! Well, if you eat a steak or chicken breast, don’t you feel full afterwards?
These high protein bars are extremely satisfying and filling. Indulge without the guilt before or after a workout, stay full and satiated, and help build lean muscle and recovery.
With that protein comes energy, so try to workout for at least ten minutes after eating so that you put your body in fat burning mode and increase lean muscle production!

Mini Egg Protein Bars Ingredients
- Natural smooth peanut butter (or regular peanut butter but will have added sugar)
- Vanilla whey protein powder
- Stevia to sweeten (sugar free maple syrup works too!)
- Sugar free white chocolate chips
- Coconut oil
- Cadbury Mini Eggs (the best! But you can also use a different brand)
How to Make No-Bake Easter Protein Bars
Involving only a few simple steps, it’s easier than ever to make these no-bake Easter protein bars. Here’s how to make ’em.
- Make the peanut butter layer. In a large bowl combine the peanut butter, vanilla protein and sweetener.
Tip: melt the peanut butter slightly so it’s easier to mix! - Pour into a wax paper lined baking dish or tray (I used an 8×8 dish).
- Melt white chocolate and coconut oil in the microwave or stovetop in 30 second increments, stirring in between. Then pour on top of the peanut layer and gently spread using a spatula.
- Smash mini eggs in a ziplock bag, leaving a variation of different sized pieces. Sprinkle on top of the white chocolate layer.
- Freeze for an hour, cut into slices and enjoy!

How to Store Mini Egg Protein Bars?
Keep the bars stored in the fridge, chilled or in the freezer in an air tight container. If left on the counter, they will begin to melt.
Similarly to these chocolate peanut butter bars, storing in the freezer is best. They will keep for 3-6 months frozen! Be sure to cut the bars into your preferred portion sizes before freezing.
And if you’re on the go, a cooler or with a cooler pack is best to keep them from melting.

Ingredients

- 1/4 cup stevia or sugar-free maple syrup
- 1/2 cup sugar free white chocolate chips
- 1/2 tsp coconut oil
- 1/2 cup Cadbury Mini Eggs or other brand
