- mild Italian sausages (or hot Italian)
- onion
- garlic
- green, yellow, orange and red peppers
- salt and pepper
- garlic powder
- olive oil
- Italian herbs and spices

How To Make Sausage and Peppers
Simply put, all you have to do are a few short steps to get the most savoury sausage and peppers.
- Cook the sausage first with olive oil.
- Prep the veggies by washing and chopping, and then mincing the garlic.
- Remove the sausage and chop into pieces, add back into the pan with more oil, veggies, garlic, and seasonings.
- Sauté until peppers are fork tender, and enoy!

Italian Seasoning Tips
To make life easier, you could buy an Italian seasoning blend, but I usually like to choose which herbs I use so I buy and use them separately.
For this recipe, I use parsley, basil, sage, and oregano. Sometimes thyme and rosemary can be too overpowering especially for the little ones, so I sometimes leave it out.
Of course, ideally you’ll want to use fresh herbs from the garden if you have them on hand. Fresh or dried, the dish will still be delicious.

Additional Add-Ons for Sausage and Peppers
The more veggies, the merrier. You’re welcome to add in some freshly chopped zucchini, carrots, or even shredded cabbage. Just keep in mind the cooking time is longer when adding carrots. Melted mozzarella on top can also be an amazing addition.
For those who like their traditional sausage and peppers with a lot of sauce, you can add in a can of tomato paste and tomato sauce. Just keep in mind that there is a higher sugar count in tomato sauce, and the recipe can be great with or without added tomatoes.
Another great option for added liquid or sauce, you can add in a cup of chicken broth, or a cup of white cooking wine. Trust me, it will smell amazing and is great to switch up the recipe every now and then trying different ways your family might enjoy it.

Italian Sausage and Peppers (GF, Low Carb, Keto, Paleo)
Equipment

Ingredients
- 2 tbsp olive oil extra virgin
- 1 lb Italian sausages (mild or hot) 4-6 sausages
- 1 onion medium
- 4 cloves garlic minced
- 1/2 green pepper
- 1/2 yellow pepper
- 1/2 orange pepper
- 1/2 red pepper
- 2 tbsp parsley, oregano, basil, and sage or can also use an Italian seasoning blend
- 1 tsp garlic powder
- 1/2 tsp salt and pepper
Instructions
- Wash and chop the peppers and onions, removing seeds, and mince the garlic.
- Heat olive oil in a pan on medium high heat and cook the sausages, turning frequently for 8-10 minutes or until browned and crispy.
- Remove sausages from pan and chop into 1/2" thick pieces.
- Add more olive oil to the pan, add the sausage back in, along with the garlic, onions, peppers, and herbs and seasonings.
- Cook on medium for another 15-20 minutes until peppers are fork tender. Serve and enjoy!
